Lamb Köfte with couscous and yogurt sauce
Serves 4

500 grams of ground lamb
50 mL plain bread crumbs
100 mL milk
1 teaspoon salt
1 bunch fresh coriander (cilantro)
1 small yellow onion
1 tsp ground coriander
1 tsp ground cumin
1 pinch finely ground white pepper
1 egg

  • Preheat oven to 225 degrees C (450 F)
  • Mix breadcrumbs with milk in a bowl. Let stand for about 10 min to allow breadcrumbs to absorb all milk
  • Add salt, pepper, ground coriander and cumin and mix together
  • Grate onion and finely chop the fresh coriander leaves. Discard the steams
  • Add meat, onion and fresh coriander to the bowl and mix quickly
  • Add egg and mix all together quickly. Do not mix too long as the meat can become tough
  • Grease a baking tray or line it with parchment paper
  • Rinse your hands under cold water and take about a tablespoon at a time of the mixture and form the meat mixture to small balls
  • Place on the baking tray and fry them in the oven for about 12 minutes until they are cooked through
  • Serve with couscous and vegetables and a yogurt sauce

Yogurt sauce

200 mL Greek or Turkish yogurt
2 cloves of garlic
Salt & pepper to taste

  • Mix the yogurt with the crushed garlic.
  • Season with salt and white pepper
