Beef Tenderloin with Chocolate-Red wine sauce
Serves 4

Chocolate-red wine sauce
1 small yellow onion
1 Tbsp soft or liquid margarine
200 mL of red wine
1 beef bouillon cube
300 mL water
20 grams of 70% chocolate with chili
Salt & pepper

Potato Cake
600-800 grams white potatoes
1 +1 tbsp soft or liquid margarine

Beef tenderloin
4 steaks tenderloin, about 120 grams each and 1 inch thick
1 Tbsp soft or liquid margarine
Salt & pepper

Start with chocolate red wine sauce

  • Chop onion finely.
  • Melt the margarine in a saucepan and sauté the onion over medium heat until it becomes soft.
  • Add wine, water and bouillon cube.
  • Simmer sauce on low heat until half remains (about 30 minutes). Stir occasionally.
  • Tip: Keep an eye on the sauce, if you have too high heat can the sauce can be too much reduced, but you can add more liquid if this happens.
  • Strain sauce and season with salt and pepper to taste.
  • Break the chocolate into the sauce and stir until chocolate is melted
  • Tip: If your sauce is done before the potato cake; just leave it in a sauce pan and heat it up just before serving.

Next the potato cake

  • Preheat the oven to 225 degrees
  • Peel and cut the potatoes into thin slices, preferably with food processor
  • Grease an ovenproof dish or roasting pan with soft melted or liquid margarine
  • Add potato tightly in the dish
  • Flatten the potatoes with a spatula
  • Drizzle 1 tablespoon melted or liquid margarine over potato cake. Salt lightly with sea salt
  • Roast in the oven until potatoes are tender and browned slightly, about 40 minutes

 Lastly grill your steaks 

  • Heat margarine in a frying or griddle on high heat
  • Add meat, and brown for 1 minute on one side, flip the meat, lower the heat to medium-low
  • Fry for another 2-3 minutes, turning the meat again and finish for 2-3 minutes. (Longer time for medium, less time for medium-rare)
  • If you want well done meat, cook about 3-4 minutes per side. Note this is just an indication it all depends on the thickness of the meat and the heat of your stove.

Serve grilled steaks with potato cake, the sauce and a mixed salad!
