Whole Grilled Chicken with Bulgur and Quinoa Salad
Serves 4

1 whole chicken, ~ 1 kg
2 Tbsp of sunflower or rapeseed oil
1 Tbsp of soy sauce
1 Tbsp of honey
1 tsp ground paprika
1 tsp salt
1 pinch of black pepper

Bulgur and Quinoa Salad
150 ml of uncooked Bulgur
50 ml of uncooked Quinoa
1 Tbsp Olive Oil
1 lemon
1 bunch of fresh coriander (cilantro) or parsley
2 stalks of celery
3 spring onions
1 large tomato
½ cucumber
1 red bell pepper

Grilled Chicken

  • Set oven to 200 degrees C (400F)
  • Cover an oven pan with aluminum foil
  • Rinse the chicken and tap it dry with a paper towel
  • In a small mixing bowl; mix oil, soy sauce, salt, pepper, paprika and honey
  • Brush the outside of the chicken with the mixture.
  • Place the chicken on the pan
  • Cook in oven until done, about 1 to 1.5 hours.
  • The liquids from the chicken should be clear without any pink.
  • Divide chicken into piece and place on a serving plate

Bulgur and Quinoa Salad

  • Cook bulgur and Quinoa according to the recipe on their packages
  • Note that quinoa usually has to be rinsed before cooking or it can taste like soap. It usually says on the package if it needs to be rinsed or not.
  • When the grains are cooked, add them both to a salad or serving bowl
  • Chop coriander or parsley.
  • Cut bell pepper and tomato into small pieces.
  • Slice the celery and spring onions thinly.
  • Add the veggies to the bulgur and quinoa and mix carefully.
  • Cut the lemon in two and squeeze the lemon juice over the salad.
  • Pour over the olive oil and mix salad carefully.

Serve the salad together with the chicken!
