If you are anything like me then during summer time you are looking for good food that takes little effort. So how about some Arctic char – Röding in Swedish. This is a recipe that is inspired by gravlax. It is cured with salt, sugar, pepper and dill but for only 6-8 hrs.
Take a side of char or two depending on size. When you are buying from the fishmonger ask them to keep skin on. I would say about 900 gram (~2lb) serves 4-5 people. Mix ½ teaspoon each of salt and sugar and a pinch or two of cracked white pepper. Sprinkle mixture over char and pat lightly. Add plenty of chopped dill on top and again pat lightly.

Place in fridge for 6-8hrs. I make mine in the morning then it cures over the day and ready for dinner. It will water some so make sure you place char in dish or on a plate to catch the liquid. No one likes to clean a fridge that smells fishy!
Bake in preheated oven 225C (450F) for 8-10 minutes. Char is usually quite thin so make sure you don’t overcook it. You can also grill it, but make sure you oil the skin side well or it will stick badly to the grill. Again, cleaning not fun!
Gravad Arctic Char with Potato Salad
Today I served mine with homemade potato salad but otherwise I recommend some new potatoes with dill pesto. And don’t forget to serve with some wedges of fresh lemon to squeeze over the fish. I find it to be something refreshing over the combination of dill and lemon!
