Love this time of the years when the Farmers Markets start to really fill up with fresh greens. Yesterday I picked up some fresh spinach, a lovely healthy base for a tasty salad.
Had some chicken tenderloins at home so I marinated them with rapeseed oil mixed with honey and Sriracha sauce for about 2 hours (1 Tbsp each of oil, Sriracha sauce and honey to 500 gram chicken tenderloins).
As I love the taste and heat of hot sauce I topped the chicken with additional Sriracha sauce before baking them in the oven. Tenderloins are small and cooking quite quickly in the oven, 12-15 minutes is usually enough to roasted them in 225C degrees (430F). I left them to rest for 5 minutes before cutting them up.
To assembly simply toss spinach with some good olive oil, chop up the chicken, add some homemade croutons and top off with freshly shaved Parmesan. Easy, simple and delicious!
