This cold weather we have here in NYC is calling for soup! I know I’ve said it before: I love tomatoes so no wonder I also love tomato soup.
Roasting the tomatoes bring out the sweetness of the tomatoes. I love the combo of roasted garlic with tomatoes so I always add some garlic cloves to the roasting pan. And of course onions are a must too!
For me the key to successful roasted veggies are time. Lower heat and longer time is my go to tip. To balance the acidity from the tomatoes I sprinkle a little sugar on top of the tomatoes the last part of roasting.
Had some leftover baguette so I sprinkled some sliced bread with parmesan cheese and toasted in the oven as the oven was already hot.
Remember Life is too short to not eat and drink well!
