Finally the time is here to go home for my summer visit and vacation in Sweden. Our summer house is located close to the water on the west coast of Sweden [Halland]. Nothing beats fresh fish so with this location seafood is on top of my food list!
Shopping at our local fishmonger the seafood of choice is of course what is available that day. So when I saw those big fat mackerels it wasn’t hard for me to decide! Mackerel has been one of my favorite fish as long as I can remember.
Mixing butter and dill, and filling mackerels that are then baked in the oven is an old time favorite of mine. When I was very young I was a scout, and during one of our hikes we wrapped the dill and butter filled mackerels in foil, placing them in the hot ashes from our open fire to cook. I can still dream about that mackerel! Unwrapping the foil, the rich aromas from dill, butter and mackerel escaped and my mouth watering! Yummy!
