Long time since a Friday dinner tip! And as it is summertime this Friday dinner tip includes grilling! This is one of my family’s fav summertime grill dinner. We all love monkfish and we all love bacon!
Monkfish is an excellent fish for the grill as it is meaty and doesn’t easily fall part on the grill. By wrapping it in bacon, the bacon will aid in keeping the flavors and fish together. The bacon gets nicely crispy and add a salty smoky flavor to the fish.
Picking up fresh herbs from the garden is of course another summertime high for anyone who likes to cook! The aromatic oils from the fresh lemon zest and rosemary leaves get released by the heat from the grill and leave a fresh flavor that marries well with the fish.
Ensure the grill is really hot so the bacon gets crispy and also shrinks, which will help the fish and seasoning to stay together on the grill. Fish is ready when it is white and flaky.
New potatoes is a staple in Sweden during summer-time. I honestly admit we may get a little tired of just boiled new potatoes but adding spices, herbs, oils, garlic and other ingredients can really “pimp” up the potatoes! This time I cut up the extra bacon I had, fried it crispy and picked up some chives from the garden that I finely cut and sprinkle on top.
