Happy Friday! When it is hot and sweaty as NYC is right now I crave salty food and fresh veggies! Therefore this combo of salty bresaola over peppery arugula fit my taste buds just perfectly today!



Bresaola is an Italian air-dried salty beef that is perfect for antipasto. As the meat is very thinly sliced it can dry out very easy therefore I always try to buy it same day I’ll use it. Bresaola can be found prepacked in grocery stores but if you have the chance to go to a deli and buy newly sliced it is so much better!

For this starter I cover a big plate with a layer of fresh arugula (rocket). Place the slices of bresaola on top. Top with roasted pine nuts and shaved Parmesan. Drizzle a peppery nice olive oil over. And voilà starter is ready!
I also serve this on a buffet or make individual plates for starters.

Remember Life is too short to not eat and drink well!
