I have a very nice fish store around the corner. When I urge for fish I just swing by and see what they have to offer. This weekend they featured fresh Torbay Soles.
I really enjoy all different kind of soles. The Torbay Sole also called Grey Sole is from the northern Atlantic. It is cold-water fish and also very common to find in Sweden and rest of Northern Europe.
I lightly pat the fillets with flour and then fry them. Serving them with tomatoes fried with garlic and some flat-leaved parsley. This is an easy quick recipe that I find both fresh and light. I’ll serve my soles with boiled fingerling potatoes.
