Easy chicken dish that basically fixes itself in the oven! Perfect for the day when I don’t have time for lots of prep or if I have guests over as I can spend time with them instead of in the kitchen.
Root vegetables are the best seasonal winter vegetables. In this dish I used carrots and parsnips. Of course one can add others such as turnip, rutabaga, celeriac root or just carrots of different colors. Make sure they are cut in similar chunks so they cook evenly.
In this dish, start with a cold oven and then turn on the heat after you put the pot in the oven. After one hour, take of the lid to give the chicken and veggies a nice brown color.
Always good to chicken is of course a nice beer such as an IPA or if you prefer white wine I really like Sauvignon Blanc or Pinot Noir to this dish.
