French Onion Soup is one of my absolute favorite soups! After my Instagram post some of my friends asked for my recipe so here it comes!
Peel and thinly slice a bunch of onions, yes I might shed a tear or two doing this task!
Add to a Dutch oven and as always with caramelized onions give them time! Lots of time! I can’t stress enough that making French Onion Soup requires time! I usually start mid-morning to have it ready for lunch. As the onions do not require constant watch I can still do a lot of other things while the onions get cooked and caramelized.
Be generous with the Gruyère cheese as this really is the dot over the I so to say for this dish! But not so generous that all you will end up is a big lump of melted cheese! I get that sometimes in restaurants and that is not a hit!
To this soup I enjoy the rest of the white wine! I often chose an unoaked Chardonnay, Gewürztraminer or Bourgogne Aligoté. If you prefer drinking red to the soup I would go with Beaujolais Nouveau. As always recipe can be found on top of page in English and Swedish!
