I know long time since I gave you a Friday Dinner tip! I honestly admit that since I moved to NYC I eat out a lot more and cook less! OK so will promise to give you at least some Friday Dinners in 2014! Especially as some of you asked me where they were… Thank you for asking as that makes my day that you like them!
First out is braised short ribs! Perfect food for a winter day! Beef short ribs are not a very common cut in Sweden nor the Netherlands so actually I never cooked them until I moved to US. Just like pork ribs they are a tough piece of meat so cooking them for some time will make them really tender and juicy. They are definitely worth the wait!
Braising is a good way to cook tough meat, start with searing (browning) the meat then add the liquids to cook them in. For this Friday I cooked the ribs with beer. I really think beer is an excellent liquid to cook food in! I make lots of stews with beers (like my Stout stew) or use beer when I cook mussels.
As this dish will take you a little more than 2 hours to make including prep-time enjoy a drink and some snacks while you wait. As always recipe can be found on top of page in both English and Swedish!
