I love figs in combination with chèvre! As I had a chunk chèvre at home I went out to buy some figs. I searched all my 4 neighborhood grocery stores for fresh figs without luck! Quite annoying I must say! Decided to buy dried figs and make fig marmalade instead.
This is quite easy! Finely chop 1/2 small red onion and 6-8 dried figs. In a small saucepan melt some butter and add the red onions. Let the onion caramelize on low heat for about 15 minutes. Add the chopped figs together with 2 Tbsp of balsamic vinegar, 1 Tbsp honey, and 100 mL of water. Simmer for about 20-30 minutes until all water is gone. And yes there is the thick yummy marmalade!
Yummy, yummy on some good cheese! And a glass of Port on the side of course!
