I honestly admit I was never a big fan of lentils until I was served Puy Lentils. These small lentils are a little harder and they hold their shape better and therefore not giving me that mushy mouth-feel that I didn’t like about lentils.
In Europe the name of Puy Lentils are protected and only these lentils from Le Puy in France can be called Puy Lentils. Yes, just like Champagne and Camembert but without the flare I guess! Here in US one often see them called French lentils.
Ok, so not the biggest fan of lentils I add something that I really like to this dish and that is Blue cheese. Yes, I am a cheese lover! And as long as I can remember Blue cheese has been one of my favorites!
Adding blue cheese to the soup makes the soup richer and the mouth-feel is thicker and smoother. The blue cheese flavor really blends well with this hearty soup.
Remember Life is too short to not eat and drink well!
