It is almost Christmas and at this time of the year I find it being quite busy! End of the year at work (all those deadlines), Christmas shopping, social events, and all the other things I have to do!

For this Friday Dinner I suggest a very easy and tasty sandwich. It is one of my favorite sandwiches – The Bookmaker Toast! It includes my favorite condiment – Dijon mustard! I can eat it with a spoon!!!! And fresh grated horseradish! Another favorite of mine! The combi – lovely!

I serve the toast with potato wedges. Most of the time I cook my wedges before I bake them in the oven as this reduces baking time as well as I find they get extra crispy. They get a different outside cover if first boiled! And I serve my wedges with mayonnaise! Yummy!

If you don’t have time, skip the potato wedges or use the frozen kind.

For this meal I definitely recommend a cold beer! As always recipes can be found on top of page in Swedish and English!

The original recipe calls for a raw egg yolk on top but due to food safety I these days omit it. If you know your eggs are fine to eat raw feel free to add the egg yolk.

Remember Life is too short to not eat and drink well!
