Sweet potatoes is something that I got introduced to in USA. Growing up in Sweden sweet potatoes were not very common. Honestly I’m not sure if it even existed! Strange as Sweden has lots of root vegetables. But these days one can find it in most regular grocery stores and I have also noted an increased number of Swedish recipes including sweet potatoes.
For this Friday I suggest to make a very easy dish with sweet potatoes, chicken and some onions. This dish has few ingredients and doesn’t take much in prep time so for me this is an ideally dish if I am short of time.
Sweet potatoes have quite a different taste than regular potatoes and I personally like the combination with onions. Baking sweet potatoes and onions brings out their natural sweetness. I pour a small amount of chicken stock at the bottom of the pan as this will capture all the lovely juices from the chicken and give the dish a little extra sauce.
Also I like to serve this dish with a cold yogurt sauce The sauce is a staple that I often make to chicken; just mix thick yogurt such as Greek yogurt with Mango Chutney. And yes, I use the store bought chutney! An easy sauce to have on hand!
