Fall equals apples! And apples makes a great combination with pork! So for this Friday Dinner I will combine the two!

One of the essential tools in the kitchen is a meat thermometer. Having a meat thermometer will ensure that your meat comes out exactly as you want it! But make sure you keep an eye on it or buy one with an alarm that goes out when reached desirable temperature. When cooking a whole piece of meat like this time, a pork tenderloin, the meat thermometer will come handy as you want to ensure the pork reaches 65 degrees C (150 F) for food safety.

Not such an essential tool in the kitchen but very handy to have is the apple corer. But of course you can halve an apple and use a paring knife to take out the core. When heating up the apples and onions in the frying pan the natural sugars will come out and onions and apples will caramelize. Mix the caramelized apples and onions with crispy bacon.

Serve the pork and apples with some roasted potatoes! And for wine I suggest a Pinot Noir but also a Chardonnay can work if you prefer white!
