Last weekend I had some friends over for dinner and one of them had said it was some time since she had home cooked chicken so I thought why not: Let’s make a chicken pot!
Sure this dinner takes some cooking time! But prep time is short! Enjoy some snacks and a cocktail while you wait for the pot to finish! And the chicken really gets tender given the extra time under lid in the oven, which keeps the moisture inside the pot. The chicken and the vegetables get cooked in their own juices and with a splash of wine!
As some Dutch ovens are more sensitive than others I always start with a cold oven. That way the pot slowly heats up together with the oven and you reduce the risk of damaging your pot!
To this chicken pot I served a bulgur salad with pomegranate seeds! It really splashes when you squeeze out the seeds from the pomegranate and there are many tricks how to best do it. I usually do it in my sink and squeeze them out. Or I use the back side of a wooden spoon and I bang them out so to say.
One of my friends who were over for dinner gave me the tip to squeeze them out under water. That way all the white floats, the seeds fall to the bottom and there is no juice that splashes everywhere! I never tried that but will do next time! If you have a great tip for getting the pomegranate seeds out and not spray yourself and kitchen please share!
