WOW! A week pass so quickly! Can’t believe it was a whole weeks since I headed for NYC! Back to reality! Love to travel but it is nice to be home too! Honestly I actually like being back in my own routines again.

So what should we make this Friday? I decided it is time for some pasta! Saw some nice beef tenderloin at the grocery store and decided to cook one of my favorites. I know! I have many favorites!

Pasta Gorgonzola and Walnuts

Pasta Gorgonzola and Walnuts

A traditional dish where you add beef to a gorgonzola sauce and top with some  walnuts. Many people prefer to use gorgonzola dolce for this dish. Gorgonzola Dolce is creamier smoother and “kinder” in it’s flavor. But I like to use Piccante, which has a much stronger blue cheese flavor, which I personally think fits well with beef and the walnuts! If you prefer a less strong blue cheese flavor then go for the dolce!

The gorgonzola gives quite a lot of saltiness to the dish so I recommend not to add any extra salt. I also love to crumble some additional cheese on top of the dish so one gets some chunks too!

Don’t forget a nice red Italian wine!
