This Friday I’ll be in New York City! Long time since I spent time in the actually city so quite excited I must say. I’ll make sure to post some reviews for restaurants I visit while there. So look out for more posts!
But it is Thursday and I’ll make sure you still get a Friday Dinner recipe!
So for this Friday I suggest that you grill some chicken. And if you are short of time you can always buy a ready-to-eat grilled chicken in the grocery store or at the butcher or where you now can buy a grilled or rotisserie chicken in your neighborhood.
To the chicken I suggest to pair it with a bulgur salad! By switching the veggies and the dressing a bulgur salad can be so versatile. For this week I add some cherry tomatoes in different colors and pair them with fresh apples as apples are in season. And then season with chopped basil and red onions.
And the best thing is: This taste as good tomorrow so don’t be afraid for some leftovers for Saturday lunch! Note though as apples oxidize (become brownish) squeeze some lemon or lime juice before you cover the salad over night!
Remember Life is too short to not eat and drink well!
