Tomato season is definitely here! I love tomatoes! As they are, in salads, as side dishes, in quiche, soups or stews, and of course as sauce!

And now during tomato season I always make homemade tomato sauce for my pasta! It is the best!

I saute some finely chopped onion and garlic. Add a couple of anchovy fillets; they basically melt in the hot pan! And they work wonders to add flavor and saltiness to the sauce! I chop sun-ripened tomatoes and add it to the sauce pan. Add a pinch of sugar and let it all cook for 15 min. Just before serving I go over with my pepper mill and add some chopped fresh basil! And voilà ready to serve!

Spaghetti al Pomodoro

I’m quite a lazy person so no, I don’t remove the skin of the tomatoes before I boil them in the sauce. When the tomatoes have been boiling for a couple of minutes the skin loosen from the tomato meat and then I use a tong to fish them up from the pan!

And as always with tomato based pasta sauces I grate some Parmesan over my Spaghetti al Pomodoro! Bon appetit!
