It is so lovely in the summer with all the BBQs going on. One meat that works very well on the grill is pork tenderloin. Pork tenderloin is a very tender meat but some people find it a little bland therefore marinate will give it a little more flavor. As I find that pork works well with some sweetness I add some honey in my marinade.
For this week I suggest cutting the pork tenderloin into slices. Then use your hand to punch it to half the thickness. Of course you can use a meat club but as the pork tenderloin is so tender and you don’t want it too thin I personally prefer using my hand for this task! And it is a little fun too! And then after marinating the meat thread them on skewers. Easy to handle on the grill!
Here in Toronto it is peach time! In all grocery stores they sell peaches in baskets so for this Friday I thought why not do something with peaches! So I paired the skewers with a peach salsa. If you can’t find peaches, nectarines or apricots works too. But the later two are usually a little firmer so ensure you have very ripe ones if you substitute the peaches for nectarines or apricots!
To give the salsa some heat I add some chili! As this can get a little hot I recommend that you test your way to the amount you like! And there are very many variants of chili so ensure you pick a mild or hot one depending on your preference! To balance the heat and sweetness I add some lime zest and juice. And also some spring onions as I like it in the combination!
I also recommend that you cook some bulgur or couscous and serve to the skewers and salsa! Following directions on packages! I though recommend that always cook bulgur and couscous in some stock or bullion instead of just salt! Makes it a little more moist and tasty!
I personally find this salsa quite flavorful (and a little hot) therefore to this dish I drink a light or larger beer. If using mild chili a light red wine can work too!
