Here in Toronto it is really hot and sunny! And I love it! But on days like now I really don’t want to stand over a hot stove to make dinner. I’m craving juicy and tasty salads with fresh tastes!

And this is a great time to enjoy them as the gardens are full of fresh local veggies. The farmers market and the grocery store are filled up with fresh veggies and if you are lucky you might even have a garden where you can pick your own veggies!

So for this Friday Dinner I suggest a salmon with fennel salad! I love the combination of fennel with apple. Add some olive oil, tangy vinegar, go over with the pepper mill and sprinkle some sea salt on top! And then you are ready to dig in!

The salmon I coat with a dressing of Dijon mustard seasoned with fresh dill. And of course some fresh baked bread always suits a salad! Who doesn’t like to dip the bread in the left over dressing on the plate! Or add some warm new potatoes to make the salad more filling.

Enjoy a crisp Pinot Gris or Chardonnay to your dinner! Or on a hot day I find a beer can be a real thirst quencher!
