The other day I made this dinner for our good neighbors here at our summerhouse in Sweden. I really like this recipe and I think they did too!
Majority of countries cut their meat differently. Here in Sweden we have a cut of pork that is very common to use on the outside grill as it is marbled and therefore stays juicy. We call it fläskkarré. This piece of meat is cut from the front shoulder of the pig. As this is not that common in other countries a pork loin works just as fine.
The meat should not be marinade instead you make a rub-mixture that the meat should be covered by. The freshness of the lemon zest really works well with the pork! And rosemary always work well with pork!
For the potatoes I mix in some bacon bits. The bacon adds both flavor and salt to the dish. And for me personal no extra salt is needed. I must say that this potato-dish is very tasty!
