This time of the year I feel that the weather is quite unpredictable. One day it is hot summer weather and the next it is cold, rainy and feels more like an early spring day.

I must say that is the weather we have had here in Toronto lately. Just today when I write this post it has been hot and sunny as well as rainy. All evening long we have had heavy rain and then 10 minutes later it is sunny and then the rain comes back again!

So what kind of food is suitable for this Friday? I want the freshness of summer but still something more like comfort food that I love during cold weather months.

Therefore for this Friday I publish my lemon chicken. The freshness from lemon that is baked with a wholesome chicken in the oven. You pour some chicken stock over the dish and the juice that one gets when the dish is done is to die for. At least I think so! I love sour juice from the lemon mixed with the saltiness from the chicken. One important aspect of this dish is that the lemon is bright yellow and ripe!

I often serve this dish with some rice or bulgur during winter months. But for summer fresh baked bread to just dip in the juice works well!

I love an India Pale Ale to this dish! In Sweden I would go for the one from Nils Oscar microbrewery!

And if you have a very juicy chicken and end up with lots of leftover juice save it and you have the perfect base for a lovely soup.
