There is no fruit I love so much as mango. For the last month it has been mango season in Mexico and Florida so the stores here in Toronto have been full of mangos and for very good deals! I basically eat one every day!

There are many varieties of mangos.  Ataulfo is a variety from Mexico that is very common to find here in Toronto. I find that the ataulfo when it ripens doesn’t tend to get fiberouse like the bigger mango tend to do if over-ripe.

The ataulfo reminds me of the smaller mango I have eaten in Asia. I also seen the ataulfo mango be called Manila, probably as it looks like the Filipino mango. I must say that the mangos from Philippines are the best I have eaten. They are so sweet and juicy! Yes, they are just plain delicious!

The green mango from the Philippines is very special. I don’t think any other green mango taste like that one. It is quite sour! Yes it is unripe! In Philippines the green mango is often served with the salty shrimp paste  (Bagoong alamang). I love the Filipino green mango with shrimp paste! When I visited Manila I had it every day for dinner!

Just like salt and sour goes well together so does salt and sweet. Paring sweet mango with prosciutto is a great combination. Yes, I know prosciutto usually comes with melon but next time try mango!
