Some Fridays I just want to come home and relax and not spend time on cooking. So what is better than something that goes superquick to prep and then I pop it into the oven and the dish fixes itself?
Ovenroasted chicken with veggies is my to go meal for this. I usually buy chicken parts and add some vegetables that I have at home, place everything in one oven-proof dish, sprinkle some herbs, salt and pepper and then let it sit in the oven for about 40 min. And I can kick off my shoes, lay down on the couch and sip on a glass of wine or cocktail!
For this Friday I suggest to pair the chicken with turnip, carrots and garlic! Last summer was the first time I got my eyes up for the white turnips! The ones that are about the size of a tennis ball and little purple on the top! Of course I knew about them but I actually didn’t think I would like them. But was I mistaken! Yes, sometimes ones perception of food can be quite wrong!
The white turnips are not as hard as rutabaga (yellow turnip) and they turn quite sweet when roasted in the oven. I think they fit perfectly with the roasted chicken. And another thing that is just delicious is whole cloves of garlic that are roasted. Yummy!
As this is a super easy dish to fix if you have people coming over and you want to spend 40 min fixing yourself up instead of cooking this is your dish. Add a fresh green salad and some freshly baked bread! And yes, there are some tasty juices that comes from the dish which is perfect for dipping fresh bread in. It is to die for!
