The other day my friend Linda and I had bought some asparagus that we cooked for dinner. As asparagus is in season it was quite a huge bunch and too much for us to split in two. Therefore we had half the bunch left in the fridge and we thought a good pair would be with salmon. Using only 5 ingredients (and salt and pepper) I fixed us a salmon dinner; salmon fillets, mayonnaise, Parmesan cheese, edamame and asparagus.
Cooking with mayonnaise is quite big in some countries while in others mayonnaise is only used for spreading sandwiches or mix with cooked chicken, potatoes or tuna to make “salads” i.e. chicken salad, potato salad, tuna salad. In this recipe one basically spread the mayonnaise on top of each salmon fillet and then top with grated Parmesan cheese. Personally I think this combo makes the salmon very juicy and the melted Parmesan cheese on the top gives some extra flavor to the dish.
My friend Linda said over and over again: “This dish is fantastic! And so easy to prepare”. And yes it is very easy to make, and one can make it for one, for two, for a family or why not for a bunch of guests as it can be prepared in advance. And just pop it into the oven to cook.
In my family we always had salmon for dinner on Good Friday, therefore I thought this recipe can work great for this Friday dinner. I hope you will enjoy it as much as we did.
